 E. JOHN CORKINS Food Trades with Donald Askew A crisp salad for lunch? FOOD TRADES There are many jobs available to high school gradu- ates who want to get started immediately in the food service business. The industry employs more than a mil- lion waiters and waitresses, 60,000 cooks, 350,000 food production workers and 200,000 counter fountain work- ers. And that doesn’t include the 75,000 new openings every year. As an individual gains experience, he can be promoted quickly to better paying jobs and may advance to super- visory or managerial positions, such as waiter-captain, hostess, dining room manager, maitre d'hotel and man- ager of the establishment. A high school graduate can can enter the business di- rectly and work his way to the top. Thousands of people have taken advantage of this aspect of the industry, not present in a number of other fields. However, the fastest way to move ahead in the food service industry is to start further up the ladder. 26
