Milk flows into heater in centre at a temperature of 4 » degrees F.. and is instantly heated t 14n degrees F. This temperature is controlled automatically by an electric thermostat. Milk flows onto cooler at right. Cold water through top sections and brine through lower. Milk is cooled in ten seconds to .18 degrees F. Flows by gravity into tilling machines.
