Speech students learn poise, self-assurance, stage presence, and good speech habits. There are many phases of acting. Fundamentals, radio-drama, debat- ing, and play production are just a few of them. With very few exceptions all food served is prepared here at school by our eighteen employees. The only days of the week that continue to have the same menu are Wednesdays with Mexican food and Fridays with fish. It receives its basic menu from the dietitians in the central office. These foods are varied according to their popularity. Jefferson's lunch hour is divided into two periods to alternate with advisories.
