JANITOR, pictured right: Armin Welti. keefi %ec ncU, cbiiue (Luma, clecuc, Cascadians gobble a popular dessert, cream puffs (one of many of Mrs. Hough’s specialities). 2 cups water Yi tsp. salt 2 cubes margarine 2 cups all-purpose flour 1 cup dried eggs Melt margarine in two cups salted water and bring to a boil. Stir all the flour in at one time, beating vigorously. Cook one to ly2 minutes or until the mixture is glossy and leaves the side of the pan. Remove from the fire and cool slightly. Reconstitute the eggs with U 2 cups of water and add to the paste mixture in three portions, beating well between each addition. Drop on oiled baking sheet. Bake at 400° F. for 15 minute reducing to 350° F. and baking for an additional 45 minutes. Fill puffs with a chocolate or custard filling. Puffs may be iced or glazed with confectioners sugar.
