Starting at 7 a.m., the busy cafe- teria crew began their day before most teachers and administrators even arrived. Before ending their day at 3:30 p.m. the ladies fed on the average of 530 people - 180 for breakfast and 350 for lunch. Manager Mrs. Dolores Diaz said the most frus- trating part of her job was stu- dents not even trying the food they worked so hard to prepare. One food item students did seem to like were the hamburgers, which Mrs. Diaz said, were among the easiest to fix. Mrs. Diaz said they received a number of complaints about the lack of variety offered, but she pointed out that the variety and quality of food was limited by the quantity and quality of food they had to work with. hm s 5-'tr Mrs. Petra Rueda and Mrs. Maria Orozco prepare the day's daily salad.
